Description
Lactose 250g is an unfermentable milk sugar used to add sweetness, body and a smoother mouthfeel to beer. It adds these characteristics without adding colour to the finished brew.
Unlike highly fermentable brewing sugars, lactose remains largely unfermented by standard brewing yeast. This leaves sweetness in the finished beer and can create a softer, fuller character.
Why Use Lactose in Beer?
Lactose gives brewers a way to increase sweetness without relying on fermentable sugars that yeast will convert into alcohol and carbon dioxide.
It can also increase the perception of body and provide a smoother mouthfeel. This makes it particularly useful when a recipe needs extra sweetness or softness to balance other flavours.
What Beer Styles Can Use Lactose?
Brewers commonly use lactose in Milk Stouts and Sweet Stouts. Its residual sweetness can complement roasted malt flavours and help create the rich character associated with these styles.
Modern brewers also use lactose in a range of creative beer styles. These can include some NEIPAs, sour beers and other specialty recipes where additional sweetness and body suit the intended flavour profile.
The amount you use will depend on your recipe and the level of sweetness you want. Always follow your chosen recipe when deciding how much lactose to add.
Sweetness Without Added Colour
Lactose provides sweetness and body without adding colour. This gives you more control when developing a recipe where you want extra softness without changing the beer’s appearance.
Because standard brewing yeast does not readily ferment lactose, much of its sweetness remains after fermentation. This makes it quite different from dextrose and other highly fermentable brewing sugars.
