Description
Lallemand NovaLager Yeast 11g is a bottom-fermenting Saccharomyces pastorianus hybrid selected for clean lager production and strong fermentation performance. It produces a clean flavour profile with low to medium ester levels, low diacetyl and no hydrogen sulphide production.
Its broad fermentation range and fast fermentation performance make it a versatile option for both traditional and modern lager brewing.
NovaLager Yeast Fermentation Characteristics
NovaLager is a true bottom-fermenting lager strain from the novel Group III lineage of Saccharomyces pastorianus. It was selected to combine clean lager characteristics with reliable fermentation performance.
The strain produces low to medium levels of esters and low levels of diacetyl. In addition, it does not produce hydrogen sulphide, helping avoid the sulphur character often associated with traditional lager fermentation.

Suitable Beer Styles
NovaLager is suitable for a wide range of lager styles where a clean and highly drinkable finished beer is wanted.
Its neutral fermentation profile allows malt and hop characteristics to remain prominent. Therefore, it can work well across traditional lager recipes as well as modern, hop-forward lager styles.
The strain’s broad 10–20°C fermentation range also gives home brewers additional flexibility compared with lager strains that require consistently colder fermentation conditions.
Fast and Clean Lager Fermentation
One of the main advantages of NovaLager is its combination of lager character and fermentation performance. Lallemand selected the strain for fast fermentation without sacrificing the clean profile expected from lager yeast.
Low diacetyl production can also help simplify fermentation management. Meanwhile, the absence of hydrogen sulphide production reduces the potential for unwanted sulphur aromas during fermentation.
These characteristics make NovaLager an interesting choice for brewers wanting clean lager fermentation with modern yeast performance.
