Nottingham produces a relatively neutral fermentation profile with slight fruity characteristics. Its high attenuation helps produce a dry finish, while high flocculation encourages the yeast to settle effectively after fermentation.

Suitable Beer Styles
Nottingham is suitable for a particularly broad selection of beer styles. Traditional applications include Pale Ales, Ambers, Porters, Stouts and Barleywines.
However, its versatility extends well beyond traditional English-style beers. It can also be used for Golden Ale, Kölsch-style beer, IPA and Imperial Stout.
Under suitable fermentation conditions, Nottingham can even be used to produce lager-style beers. Therefore, it is a useful strain to keep on hand when you want one yeast capable of working across many different recipes.
Using Lallemand Nottingham Yeast
Fermentation temperature can influence both yeast performance and the character of the finished beer. Nottingham’s broad fermentation range gives brewers flexibility, but temperature should still be selected according to the beer style and desired fermentation profile.
For best results, consider the original gravity, wort volume and fermentation conditions when determining your pitching rate.
